Smoky chicken & bean stew recipe
Cooked this at the weekend and will cook it again for the tapas/Singstar party on Saturday. Yes, I am a geek. You didn’t know this already?
I didn’t use fresh coriander and cooked the thighs on the bone, didn’t measure anything, added chilli flakes, fresh chilli, butter beans and some…other kind of beans and cooked the whole thing for a couple of hours until the smaller beans had disappeared into a thick sauce and the chicken was so tender it fell off the bone. Yummy.
I served it with rice and a salad.
