Sweet potato, spinach & lentil dahl recipe
I can’t believe this recipe isn’t on my blog already. I cook it all the time!
I tweaked the recipe, replaced the sweet potato with butternut squash, replaced red lentils with yellow lentils, replaced fresh tomatoes with a can, added garlic, any vegetables you’ve got lying around (I like courgettes, peppers and mushrooms) and a whole load more spice, and there you have it. I don’t stir the spinach in until you’ve taken it off the hob, and it’s also nice with a few unsalted cashews stirred through.
I’m going to cook it tonight for lunches this week and freeze a load in a bid to become ORGANISED. Which I am not.
