When life throws you risotto, make Arancini! - The Amateur Gourmet
I actually quite like reheated risotto, but I’m definitely going to try this next time. Essentially, make a ball out of your leftover risotto, shove a lump of whatever cheese you have to hand in the middle, coat in seasoned flour, egg and breadcrumbs, then fry. Although, I can’t stand the thought of deep frying anything, so I might just dry fry it like a burger patty, what do you reckon?
